Seven Springs is situated on the Hemel en Aarde road between Hermanus and the spa town of Caledon. The winery is a new venture owned by Tim and Vaughn Pearson from Warwickshire. Tim's infectious enthusiasm and passion for this project resulted in a great deal of pre-release expectation, and this Sauvignon Blanc has certainley not disappointed. The quality and depth of flavour winemaker Riana van der Merwe has exracted from such young vines is extraordinary. Pale straw in colour with delicate aromas of green fruit and melon. Extended lees contact has resulted in a full, rich mouth-feel, with bags of tropical flavours beautifully balanced with a limey citrus acidity, followed by a lingering crispness that just makes your mouth water. Delicious!
