The dessert wine specialists in the Cape are producing wines of real intensity with rich, luscious qualities. Riesling ( as in our Jordan Mellifera ), Muscat and Chenin Blanc are all used. Subjected to the effects of botrytis, then harvested late to allow the concentration of the natural sugars to intensify, these shrivelled little grapes are transformed by skilled hands into some truly delicious, deep golden, sweet wines which are more than a match for those from regions more usually associated with the style, such as the Rhine valley and Sauterne. Another method used to concentrate the sugars is to pick the grapes and lay the bunches out on straw beds to dry naturally in the sun. These Vins de Paille - or straw wines as they are known - can be wonderfully fragrant and intensely flavoured.
