Sparkling wine, Methode Champenoise, Champagne, bubbly. It has lots of different names and guises. And just to confuse you more, in the Cape it's called Methode Cap Classique
True Cap Classique wines are made in the same way as Champagne. After bottle fermentation for as much as two years, the bottles are turned, the yeast sediment frozen and removed - the classic "degorgement" technique - then the wine is re-corked for further maturation. It's the tried and tested way to make quality Champagne style wines. There are many excellent examples produced in the Cape, but we though it appropriate to start our range with Simonsig Kaapse Vonkel ( literally "Cape Bubbles") as they were the first wine makers to perfect this method in South Africa. We will no doubt be adding other examples in due course, but for sheer drinking pleasure and value for money, these two will take some beating.
